7-Layer Bean Dip Cups


  • 3 Avocados, medium ripe
  • 2 Green onions
  • 2 Roma tomatoes, large
  • 1 (15.5 oz) can Refried beans
  • 2/3 cup Black olives
  • 2 tbsp Lime or lemon juice, fresh
  • 1 cup Salsa, thick and chunky
  • 1 Salt and freshly ground black pepper
  • 1 1/2 tbsp Taco seasoning
  • 1 cup Cheddar cheese
  • 1 cup Sour cream


  1. In a bowl, using a fork, stir together the refried beans with 2 Tbsp water (or more to reach desired consistency)
  2. Mix in taco seasoning
  3. Peel and core avocados and mash with lime juice to reach desired texture
  4. Season with salt and pepper to taste
  5. Add a heaping spoonful of the bean mixture to the bottom of cup
  6. Spread into an even layer using the back of a spoon
  7. Add a heaping spoonful of the avocado mixture over bean layer and spread into an even layer
  8. Follow with a layer of a spoonful of sour cream
  9. Add a spoonful of salsa (spread)
  10. Sprinkle with a layer of cheese
  11. Finish by layering tomatoes, black olives and green onions
  12. Store in refrigerator and serve with tortilla chips
